Honey and Pecan Crumble Cake for Rosh Hashana

Notes on Recipe: 

What I loved:

The crumble is a winning addition! It can boost any 'bchosha' cake! And it is a fab addition to , for example, vanilla ice-cream..just sprinkle the crumbs on top with some maple sirup and an addition of roasted pecans and you've won your way to..my hart!;)
Loved the spices(pinch of nutmeg, cinnamon, vanilla, and coffee).

Here is the recipe for the crumble( this gives about a cup of crumble): 75 gram butter(cold)

20 grans of chopped pecan nuts (it says 20 grams in the recepie, however I would double the amount to 40!)
75 gram(1/2 cup) flower
50 gram(1/4 cup) demerara sugar

Important tip: Do NOT turn the crumble into dough- that is just mix everything lightly (don't combine all the ingredients as if you were working with dough), as this will ruin the crumble effect. 

AND do NOT taste before cooled down. You won't taste al the flavours. Waiting for the next day is best!

And not as much:

The cake turned out quite dense. I have a feeling that it has to do with the baking powered or baking soda  (one , or both, were maybe out of date and did not do their job!).
